Nablus carries many names: the Mountain of Fire, Little Damascus, the nest of scholars, the uncrowned queen of Palestine. It is among the largest and most centrally placed Palestinian cities, home to An-Najah National University and capital of a district of 56 villages.
Its old city is known for soap-making and for Nabulsi knafeh, one of the Levant’s most famous sweets, along with farm products the city is known for, such as Nabulsi zaatar and cheese.
It is believed to have been the largest city in Palestine in the mid-eighteenth and early nineteenth centuries. Its story survives in the smell of soap in the vaults and the hot sugar of knafeh on the tray.
